Feta Lamb With Roast Tomatoes

  • 2 lamb racks 6 cutlets on each rack excess fat trimmed
  • 100g feta crumbled
  • 1 tablespoon finely chopped fresh oregano
  • 2 teaspoons finely grated lemon rind
  • 1 garlic clove crushed
  • salt freshly ground black pepper
  • 4 bunches 6 8 tomatoes in each bunch ripe trussed cherry tomatoes vine attached
  • 1 tablespoon olive oil
  • 4 about 800g parsnips peeled cut into 2cm pieces
  • 1 about 200g large desiree potato peeled cut into 2cm pieces
  • 235g 1 cup sour cream
  • 20g butter
  • baby rocket leaves to serve

  • preheat oven to 200u00b0c use a small sharp knife to cut down the length of each lamb rack close to the bones about 3cm deep combine the feta oregano lemon rind and garlic in a bowl season with salt and pepper
  • place half the feta mixture down the centre of the cut in 1 lamb rack and secure with toothpicks repeat with the remaining feta mixture and lamb rack
  • place lamb in a roasting pan with the tomatoes drizzle the tomatoes with oil and season with salt roast in oven for 25 minutes for medium or until lamb is cooked to your liking and tomatoes have collapsed remove from oven cover with foil and set aside for 5 minutes to rest
  • meanwhile place the parsnip and potato in a steamer over a saucepan of simmering water make sure the base of the steamer doesnt touch the water steam covered for 10 minutes or until tender transfer parsnip and potato to a medium heatproof bowl
  • add the sour cream and butter and use a potato masher or fork to mash until smooth taste and season with salt
  • use a large sharp knife to cut the lamb racks into 12 cutlets divide among serving plates and drizzle with pan juices add some rocket and a bunch
  • of tomatoes to each plate serve immediately with parsnip mash
