  • 2 tablespoons extra virgin olive oil plus extra to serve
  • 1 large brown onion halved sliced
  • 3 garlic cloves crushed
  • 1 4 teaspoon dried chilli flakes plus extra to serve
  • 2 cups massel vegetable liquid stock
  • 2 x 400g cans cannellini beans drained rinsed
  • 80g baby spinach
  • 1 4 cup finely grated parmesan plus extra to serve
  • 4 slices white crusty bread toasted to serve

The Instruction of traditional beans and greens

  • heat oil in a large deep frying pan over medium heat add onion cook stirring occasionally for 5 minutes or until onion softens add garlic and chilli cook stirring for 1 minute or until fragrant
  • add stock bring to a simmer add beans reduce heat to medium low cook uncovered for 15 minutes or until mixture thickens slightly
  • add spinach and parmesan to pan cook for 2 minutes or until spinach just wilts and parmesan is melted season with salt and pepper drizzle with extra oil sprinkle with extra chilli and parmesan serve with crusty bread
