- process the flour salt and butter in a food processor until it resembles fine breadcrumbs add the egg and water and process until the dough begins to come together turn onto a lightly floured surface knead until smooth shape into a disk cover with plastic wrap and place in refrigerator for 30 minutes to rest
- during this time make the ricotta filling mix the ricotta parma ham ham pepperoni mortadella mozzarella provolone pecorino oregano and 5 eggs in a large bowl
- preheat the oven to 180u00b0c roll out two thirds of the dough until 5 mm thick line the base and sides of 22 x 32 cm baking dish with the pastry allowing the edges slightly overhanging spoon ricotta filling into the pastry case and smooth the surface
- roll the remaining dough into a 24 x 34cm rectangle whisk the remaining egg in a small bowl brush the dough with a little egg place dough egg side down over the ricotta filling cut off the excess dough and pinch the edges to seal use a fork to prick the surface all over bake in the oven for 45 minutes brush the top with egg and bake for 45 minutes or until golden brown and the filling has set set aside to cool
