- preheat oven to 200c 180c fan forced and line a large baking tray with baking paper
- combine flour in a large bowl use your fingertips to rub the butter into the flour until nearly combined about 1 3 of the butter should still be in small gravelly pieces throughout
- stir in 120g 1 1 2 cups of the cheese make a well in the centre add the milk and use a flat bladed knife to stir until the dough just comes together turn out onto a lightly floured surface it will be very sticky use floured hands to gently press out to a small rectangle fold one third of the dough into the centre fold the other third over that press out again and fold again do this gently so you dont overwork the dough
- use a rolling pin to roll out until approximately 1 5cm cut into bars about 4cm wide and 7cm long place onto the prepared tray about 2cm apart brush the tops with extra milk and sprinkle with the remaining cheese bake for 20 minutes or until golden serve warm or at room temperature
